It’s almost Halloween and the supermarkets are full of pumpkins- who doesn’t love a good pumpkin carving competition amongst friends?  But don’t throw away the pumpkin flesh- there’s so much you can do with it! The first of my pumpkin recipes is this autumnal spiced pumpkin porridge, it’s hearty, warming and filling – perfect for those chilly mornings! It really doesn’t take much effort- the main thing is cooking the pumpkin. The easiest way I found is using a microwave steamer, mine is a sistema micro wave steamer- essentially a lunch box with an inset in it, but it does the job, and pretty quickly too! I picked mine up on Asda (it’s fab for steaming sweet potato too)! Other than that, just throw all the ingredients into a saucepan over a low heat and keep stirring until it’s cooked. I love my topped with yoghurt and nut butter (always a winning combo!).  I’ve added some pecan nuts and maple syrup to keep in with the whole Autumn theme- it sure tastes good!

40g Porridge Oats

1tbsp Chia Seeds

250ml Cashew Nut Milk (or any other nut milk)

100g Pumpkin (steamed & mashed)

1-2tsp All Spice

1 tsp Maple Syrup or Agave Syrup

  1. Cut the pumpkin into chunks and steam until soft – I used a microwave steamer which took approx 6 mins. Mash pumpkin into a purée.
  2. Place all ingredients, including the pumpkin, into a saucepan and mix until thoroughly combined. Simmer over a low to medium heat, stirring frequently, for approximately five minutes. Serve and enjoy!
