Bircher muesli is the perfect way to have your oats in summer, and it’s a great grab n go brekkie so no more excuses for skipping breakfast! ¬†Prep the night before (which literally takes two minutes) then pop in the fridge to thicken overnight and you’re good to go! There are lots of variations of Bircher muesli- I’ve tried a couple out but prefer adding banana into the mix as it adds a natural sweetness. You can also switch the raspberries for blueberries or strawberries which works equally well. Recipe makes enough for at least three servings- Enjoy!

1 cup Porridge Oats

2-3 tbsp Chia Seeds

1 ripe Banana

Handful Raspberries

1 cup Coconut Milk (or any other nut milk)

1/2 cup Yoghurt (I use Fage or natural)

1-2 tbsp Maple Syrup


1. Mash the banana and raspberries

2. Place all ingredients in a tupperware box and stir until thoroughly combined. Pop in the fridge for a few hours or overnight, this will thicken the mixture.

3. Top with your favourite toppings and enjoy!
