Bircher muesli is the perfect way to have your oats in summer, and it’s a great grab n go brekkie so no more excuses for skipping breakfast! Prep the night before (which literally takes two minutes) then pop in the fridge to thicken overnight and you’re good to go! There are lots of variations of Bircher muesli- I’ve tried a couple out but prefer adding banana into the mix as it adds a natural sweetness. You can also switch the raspberries for blueberries or strawberries which works equally well. Recipe makes enough for at least three servings- Enjoy!
1 cup Porridge Oats
2-3 tbsp Chia Seeds
1 ripe Banana
1 cup Coconut Milk (or any other nut milk)
1/2 cup Yoghurt (I use Fage or natural)
1-2 tbsp Maple Syrup
1. Mash the banana and raspberries
2. Place all ingredients in a tupperware box and stir until thoroughly combined. Pop in the fridge for a few hours or overnight, this will thicken the mixture.
3. Top with your favourite toppings and enjoy!
