Is it wrong that these pancakes kind of taste like I’m eating chocolate cake for breakfast? They are seriously delicious and such a great way to refuel, with a kick of protein, after you’ve worked out. Protein powder wise I use Sun Warrior chocolate flavour, it’s plant based and smells amazing- like opening a tub of Cadbury Drinking Hot Chocolate (drool!). If you don’t have or don’t want to add protein powder then substitute by upping the porridge oats and/or ground almonds and flavour with a teaspoon of cacao powder. Again, this is another quick and easy recipe where the food processor does the hard work and you do the eating – even better if you’ve got a waffle maker! I’ve topped mine with Fage yoghurt and raw chocolate spread as well as lots of in season fresh fruit – yum!

50g Porridge Oats

50g Ground Almonds

50g Chocolate flavoured Protein Powder

1tsp Baking Powder

2 Large Eggs

100ml Cashew Nut Milk (or any other nut milk)

1. Place the oats in a food processor and blitz until flour-like consistency. Add all remaining ingredients and blitz until thoroughly mixed.

2. Heat 1tsp coconut oil over a low to medium heat in a non-stick pan. Once the oil has melted, spoon around 1/6 off the mixture onto the pan (the mix should make around 6 pancakes). Heat until bubbles form and flip to cook for another minute or two. Repeat for the rest of the mixture, adding coconut oil to the pan as required.
