My go to pancake recipe – super easy to make, and flip (that’s important for me). I love making a big batch, or two of these, to use some for brekkie then portion them out into freezer bags and freeze. They are fab for mid week brekkies- just pop them in the toaster and add your toppings! Did I mention that each portion (half recipe mix) contains 16g of protein? That’s pretty decent! Top with a good dollop of greek yoghurt (for that extra protein kick) and all the delicious fruits, and/or nut butter – YUM!
100g cottage cheese
110g porridge oats
1tsp baking powder
1 tsp cinnamon (optional)
1 medium ripe banana
4 tbsp coconut milk (or any other milk)
1 two vanilla extract
1. Place the oats in a food processor and blitz until flour-like consistency then add all remaining ingredients and blitz until thoroughly combined.
2. Heat a little oil in a non-stick frying pan over a low to medium heat and start adding the pancake mixture. Cook until bubbles form around the edge then flip to cook for another minute or two. Repeat for the remainder of the mixture, adding oil to the pan as required.
