Looking for a new energy ball flavour combo? Well here’s a new delicious one to try out – Cacao & coconut. These take me back to my childhood – does anyone remember having those choccy biscuit coated mallows rolled in coconut. They were seriously good – and these are pretty epic too, without the guilt. Made using just five ingredients, they contain no refined sugar and naturally sweetened using dates and coconut. Super easy to prep and perfect for those afternoon pick me ups with a cuppa.
30g dessicated coconut (plus extra for rolling)
2 tbsp peanut butter
2 heaped tbsp cacao powder
1. Place the peanuts in a food processor and blitz for around 20 seconds. Add in the dates and blitz until completely broken down. Add in all remaining ingredients and blitz until thoroughly combined.
2. Take a tablespoon of the mix and roll into a ball, then roll in dessicated coconut. Repeat with remaining mixture.
3. Place in the freezer for 30mins to set then transfer to an airtight container and store in the fridge for upto one week.
