I’m such a fan of making a batch of energy balls for the week ahead – snacks that are both nutritious and delicious, perfect for that afternoon coffee. They also freeze well so you can make them further in advance. I’ve opted for a festive flavour combination, using cranberry and cinnamon. Of course if you’re not a fan of cinnamon then leave this out. You could also tweak this recipe and use a chocolate flavoured protein powder instead, add in some orange zest (and extract) or stir through some dark chocolate chunks for a more indulgent treat- so many options! Enjoy!
100g mixed nuts
60g vanilla protein powder
5 heaped tbsp peanut butter (or any other nut butter)
1 tsp cinnamon
4 tbsp levelled coconut oil
1. Place the nuts in a food processor and blitz for around 20 seconds. Add in the dates and blitz until completely broken down. Add in all remaining ingredients (except for the cranberries) and blitz until thoroughly combined. Finally, stir through the cranberries.
2. Take a tablespoon of the mix and roll into a ball. Repeat with remaining mixture.
3. Place in the freezer for 30 mins to set then transfer to an airtight container and store in the fridge for upto one week.
