So I was thinking what else could I do with my matcha green tea powder, other than making lots of green tea of course. Matcha powder has over ten times the nutritional value of green tea (crazy or what!). It’s an excellent source of antioxidants, acts a natural detoxifier, and boosts metabolism to name a few! I’ve added it to these zesty lime and coconut energy balls, and it works an absolute treat. So don’t be put off by the colour and give them a go for yourself!

1/2 cup almonds

1/2 cup ground almonds

1 tbsp matcha powder

1 cup desicated coconut (plus extra for rolling)

1 lime, zested and juiced

1 tbsp chia seeds

18-20 dates or more if required

1 tsp coconut oil

1 tbsp maple syrup

1. Place the blanched almonds in a food processor and blitz until broken down. Add all remaining ingredients and blitz until broken down and thoroughly combined.

2. Using around 1tbsp of the mixture, roll into balls and repeat for remaining mixture. Roll in desicated coconut.

3. Place in freezer for 30mins to set then store in fridge for upto one week,
