Reckon you’re too busy for all of this meal prep malarkey? Well you’ll have a delicious batch of these peanut flapjacks prepped in 5-10 minutes – although I reckon you could do it under 5!

170g Peanut butter
90g  Honey
35g Coconut oil
180g Porridge oats
20g  Flaxseeds
60g Dried apricots
70g Dark choc, chopped into chunks
50g Raw peanuts, chopped

1. Melt the peanut butter, honey and coconut oil in a bowl.

2. In a separate bowl mix together the remaining ingredients. Then add the melted pb, honey and coconut oil mix, stirring until everything is coated evenly.

3. Transfer mix to a lined baking tray or dish (I lined mine with cling film), and place in the fridge for around 1 hour. Remove and cut into slices. Store in tupperware box for up to one week.
