I’ve been pretty MIA on the whole food blogging and recipe sharing front recently. If you’ve been following my instastory you will have gathered my new project – diy house renovations. And with most of my life – including kitchen equipment- still packed up in boxes, well recipe experimenting has been pretry low down in my list of priorities – although I am missing it so much, I find it such a therapy and love sharing my posts with you all. I can’t wait to have my new kitchen complete and get back to it! However, the beauty of these energy ball recipes is that you can prep them and pop them in the freezer to use as and when you fancy. Here’s some I’ve been snacking on recently, made using just a handful of ingredients with that delicious peanut butter choc flavour combo. Yum yum yum!
120g cashew nuts
3 heaped tbsp cacao powder
5-6 tbsp crunchy peanut butter
25g dark choc, chopped into chunks
1. Place the cashew nuts in a food processor and blitz for around 20 seconds. Add in the dates and blitz until completely broken down. Add in all remaining ingredients (except for the choc chunks) and blitz until thoroughly combined. Finally, stir through the chocolate chunks.
2. Take a tablespoon of the mix and roll into a ball. Repeat with remaining mixture.
3. Place in the freezer for 30mins to set then transfer to an airtight container and store in the fridge for upto one week.
