If you like all things peanut and coconut you will love these super peanutty coconut energy balls 👌┬ánot to mention they are SO easy to make- you don’t even need a food processor, just make sure to chop up the peanuts well so they’re not too chunky, and they only take around ten minutes to make. Keep them in an airtight container in the fridge and enjoy as a healthy treat with a cuppa. Perfect for those elevenses and afternoon tea breaks.

80g peanuts, chopped

80g porridge oats

80g dessicated coconut

20g chia seeds

150g peanut butter

50g honey

  1. Melt the peanut butter with the honey.
  2. In a separate bowl mix together all of the dry ingredients, then stir through the melted mixture until thoroughly combined.
  3. Take 1 tablespoon of the mix and roll into a ball. Repeat with remaining mixture. Transfer to a tray and place in the freezer for 30 mins to set, then transfer to an airtight tupperware container and store in the fridge for upto one week.
