This recipe makes the best orange chilli marinade for chicken. I’ve made it a number of times and it works great for cooking chicken on the bbq or using a griddled pan. The marinade is quick and easy to make, and it only takes ten minutes to marinade the chicken so perfect for when you’re in a hurry. Try it out for an alternative bbq marinade or as part of a delicious salad. I’ve served mine with a griddled mango, halloumi and avocado salad – delicious!


2 Chicken Breasts

Zest of 1 Orange

1 Red Chilli or 1/2 tsp chilli flakes

1-2 tsp Hot Paprika

1 1/2 tsp Dijon Mustard

2-3 tbsp Honey (or Maple Syrup)

3 tbsp Tomato Puree

1 tbsp Rapeseed Oil (or Olive Oil)

Pinch of Salt


1. Place the chicken breasts between cling film or a baking sheet and flatten by bashing with a rolling pin until the chicken is approx. 1/2 inch thick, ensuring it has an even thickness. You can keep it as flattened chicken breasts or slice into strips of around three per breast, if desired.

2. To make the marinade, grate the zest of a large orange into a bowl. Stir in the remaining marinade ingredients. Add in the chicken and toss until the chicken is fully coated in the marinade. Set aside to marinade for 10 mins or longer.

3. Cook chicken on a bbq or griddled pan using a high heat.
