Rainy days like today call for a batch of homemade oat cookies. This recipe comes from Livia’s Kitchen, and makes the perfect chunky oat cookies- crunchy on the outside and soft in the middle with juicy blueberries! They are super sweet too, naturally sweetened using unrefined coconut sugar and maple syrup. The combination of blueberries, coconut and vanilla is just fab! It just takes a couple of minutes to prep then pop them in the oven for 20 to 25 mins- guaranteed to impress your friends and family!
1 + 1/3 cup Oat flour (160g)
2 cups Jumbo oats (230g)
1 cup Maple syrup (200ml)
3/4 cup Fresh blueberries (130g)
1 cup desiccated coconut (100g)
3 tablespoons Cashew butter (110g)
4 tablespoons coconut sugar
1 teaspoonVanilla powder
Pinch of salt
1. Preheat the oven to 180ᴼC and line a baking tray with greaseproof paper
2. Mix all of the ingredients together in a bowl.
3. Shape into fairly flat cookies and bake for 20-25 minutes until golden brown.
4. Remove from the oven and allow to cook a little on the tray.
