Try mixing up your porridge game with this summer berry and coconut combo. I always have some kind of frozen fruits in my freezer, I usually use them in smoothies but they’re also a great way to add flavour to your porridge, and much more cost effective than using fresh fruit. For this recipe I’ve used a handful of frozen mixed summer berries (strawberries, blueberries, raspberries, cherries) , from Tesco, and desiccated coconut. It’s a pretty simple combination but it sure tastes delicious!
40g Porridge Oats
200ml Coconut Milk (or any other nut milk)
3 tbsp Dessicated Coconut
Handful Mixed Berries (I used frozen summer fruits)
- Place all ingredients in a saucepan and simmer over a low to medium heat, stirring frequently, until cooked through. This should take approximately five minutes. Alternatively place ingredients in a bowl and microwave each serving for approximately two minutes- adjust according to microwave power.
- Top with fresh berries and toasted coconut- or whatever you fancy!
