Fancy something a little different to the usual chocolate cake or banana bread? Try out this super easy, super delicious combo. This was a first time experiment for me and turned out just perfectly- I can’t wait to make it again. The combination of banana, pumpkin and honey keeps it sweet – and topped with chunks of dark chocolate, well doesn’t that just make everything even better?
180g almond nut butter
130g pumpkin purée
1 medium ripe banana, peeled
20g ground almonds
1 tsp all spice
1 tsp bicarbonate soda
Pinch of Salt
25g dark choc 70%, chopped into chunks
- Preheat the oven to 180C. Line or grease a brownie sized baking tray.
- Place the almond butter, pumpkin purée, banana and honey into the food processor and blitz until smooth.
- Add all remaining ingredients and blitz until thoroughly combined.
- Pour into the baking tray and scatter the chocolate chunks on top. Baking in the oven for around 30 minutes, until cooked through – the knife should come out clean. Set aside to cool before slicing up.
