Fancy something a little different to the usual chocolate cake or banana bread? Try out this super easy, super delicious combo. This was a first time experiment for me and turned out just perfectly- I can’t wait to make it again. The combination of banana, pumpkin and honey keeps it sweet – and topped with chunks of dark chocolate, well doesn’t that just make everything even better?

180g almond nut butter
130g pumpkin purée
1 medium ripe banana, peeled
70g honey
20g ground almonds
1 tsp all spice
1 tsp bicarbonate soda
Pinch of Salt
25g dark choc 70%, chopped into chunks

  1. Preheat the oven to 180C.  Line or grease a brownie sized baking tray.
  2. Place the almond butter, pumpkin purée, banana and honey into the food processor and blitz until smooth.
  3. Add all remaining ingredients and blitz until thoroughly combined.
  4. Pour into the baking tray and scatter the chocolate chunks on top. Baking in the oven for around 30 minutes, until cooked through – the knife should come out clean. Set aside to cool before slicing up.
